I asked Chef Tajima where this mountain is? I asked,
He said he had never been there but felt it was like Mt Miyanoura on Yakushima.
I later went to Mt Miyanoura and tried it, and the taste was just as exotic (the dynamic of the tree line) and sharp (the clear, freshness of the summit area)! The taste was just right.
