That said, this is MGL. We’re in a league of our own.
We’ve transformed root vegetables—such as onions, carrots, burdock, and potatoes—into a rich purée and simmered them with a generous amount of diced pork. We’ve also taken great care in selecting the miso: we’ve crafted this dish using a flavorful blended miso from Kato Heitaro Shoten—a company with which Chef Tajima has a long-standing relationship—and a broth infused with the umami of bonito flakes.
Imagine pouring piping-hot pork miso soup—simmered until the meat falls apart—over freshly cooked rice and slurping it all down in big, hearty bites. By intentionally breaking down the texture, the concentrated umami rushes straight into your stomach. Then, you finish it off with the aromatic Kishu sansho pepper that comes on the side… It’s absolutely irresistible.
We chose Mount Tanzawa—which is close to Odawara, home to Kato Heitaro Shoten and also our own home—as our "image mountain," but Chef Tajima said, "Actually, it’s your home mountain."
This pork miso soup has that familiar Japanese flavor—yet it feels somehow new.
No matter which mountain I’m climbing, no matter how tired I am, the aroma of miso and dashi soothes and refreshes me, helping me find myself again and start walking once more.
