Originally native to Japan, the Hachiya persimmon was introduced to this entire region about a century ago and has since become firmly established as a major local cash crop.
The greatest challenge in drying persimmons without additives is "blackening." Preserving their natural color requires precise temperature and humidity control during drying, making them a difficult natural dried fruit to produce. However, they achieve this at an exceptional level.
