Harvested from abundant and well-managed populations in the Bay of Biscay, off the coast of northern Spain
・Using small purse seine nets to catch anchovies, a small fish at the bottom of the food chain, to prevent bycatch and overfishing.
Anchovies reproduce quickly and are a more renewable resource than many larger fish.
Fishermen belong to centuries-old associations called cofradías, which encourage shared interests and cooperation.
Also located in northern Spain, the processing, seasoning and canning operations are carried out by a family-run, B Corp-certified company that employs mostly women.
